Cookie Jar #7: Honey Oatmeal Raisin Cookies

These cookies have a complex sweetness, the chewiness of raisins and the crunch of nuts.

2-1/4 c. flour 

1/2 t. soda 

1/4 t. salt 

1 c. Quick oats (not instant) 

1 c. brown sugar; packed 

1/2 c. sugar 

1 c. butter; softened 

2 T. honey 

2 t. vanilla 

2 Eggs 

1-1/2 c raisins 

1/2 c walnuts, chopped 

Preheat oven to 300 degrees. 

1. In a medium bowl combine flour, soda, salt and oats. Mix well and set aside. 

2. In a large bowl blend sugars with electric mixer set at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until light and fluffy. Add the flour mixture, raisins and walnuts and blend at low speed just until combined. 

3. Drop by rounded table-spoons onto parchment-lined cookie sheets, 1 1/2 inches apart. Bake for 15 for minutes or until cookies are light golden brown. 

Makes about 5 dozen cookies.
