These cookies come together really quickly and are bursting with lemon flavor!
- Recipe -
● 2 cups flour
● 1/2 t. baking powder
● 1/4 t. salt
● 1 cup butter
● 1 cup sugar
● 1 T. brown sugar
● 1 egg
● 1 T. lemon zest
● 1/2 cup sugar, for rolling dough
Preheat oven to 375 ̊F. Line baking sheet with parchment paper.
1.Whisk flour, baking powder, and salt in medium bowl; set aside.
2. In mixer, beat butter, 1 cup sugar, and brown sugar until light and fluffy, about 2 minutes. Mix in egg and lemon zest. Add flour mixture and beat until just combined.
3. Place 1/2 cup sugar in small bowl. Scoop medium size ball of dough in sugar and roll around to cover. Place on baking sheet. Repeat with remaining dough.
4. Bake until cookies are golden brown around edges, about 11 minutes.
