A favorite in my family for over 40 years, this Pineapple Cheesecake is unbelievably delicious!
Graham Cracker Crust:
● 1-1/2 cup graham cracker crumbs (about 9 graham crackers)
● 1/3 cup sugar
● 1/3 cup melted butter
● 12 oz. cream cheese
● 2 eggs
● 3/4 cup sugar
● 2 t. vanilla
● 1/2 t. lemon juice
● 1 cup sour cream
● 3-1/2 T. sugar
● 1 t. vanilla
●1 cup finely chopped pineapple (in syrup), well drained
1. Combine ingredients for crust and press into and up sides of pie shell. Bake at 350 ̊F for 4-5 minutes. Set aside.
2. Mix ingredients for filling together and pour into crust. Place on rimmed baking sheet and bake for 30 minutes at 350 ̊F. Remove and cool for 5 minutes.
3. Mix ingredients for topping in small bowl. Spread onto top of cheesecake and bake 10 minutes longer. Remove oven and let sit for 30 minutes. Then cover cheesecake with plastic and place in refrigerator. Cheesecake must be chilled through before slicing.
