On the Side #28: Corn Pudding

This classic southern comfort food makes for a wonderful side dish or a great vegetarian main course.

- Recipe -

  • 1-2  T. butter, for dish
  • 5 eggs
  • 2 T.  sugar
  • 4 T. butter, melted
  • 1/4 cup flour
  • 1/2 cup milk
  • 1 t. salt
  • 4 cups corn (frozen or fresh)

Preheat oven to 350˚F. Butter an 8"x8" dish with 1-2 T. butter. Set pan aside.

1. In a large bowl, whisk together the eggs, sugar, melted butter, flour, milk and salt. 

2. Add corn and stir until combined. 

3. Place corn mixture in buttered dish, pressing corn down so that it is evenly distributed in the pan. Bake for 60 minutes, until golden around the edges and the center has set.
