Nothin' But Muffins #9: Lemon Pecan Muffins

A great muffin to make when you have a lot of lemons on your tree and it's perfect for either breakfast or tea!

- Recipe -

● 2 cups flour

● 1 T. baking powder

● 1/2 t. salt

● 1/2 cup sugar

● 1 egg

● 1 cup milk

● 1/3 cup butter, melted

● Zest of 2 lemons

● 1 t. lemon extract

● 1/2 cup pecans, finely chopped

Preheat oven to 400 ̊F. Line muffin tin with cupcake liners.

1. In bowl, whisk together the flour, baking powder, salt and sugar.

2. Make a well in the dry ingredients and stir in egg, milk & melted butter. Then add the lemon zest, lemon extract and pecans.

3. Fill muffin wells and bake for 18-20 minutes. Let sit in pan for 5 minutes, then remove muffins to cool on rack.
