Nothin' But Muffins #4: Pumpkin Spice Muffins

Just sweet enough...Just spicy enough...Just great with coffee in the morning!

- Recipe -

  ● 1-2/3 cups all-purpose flour 

  ● 1/4 t. baking powder 

  ● 1 t. baking soda 

  ● 1 t. cinnamon 

  ● 1 t. nutmeg 

  ● 1 t. ground cloves 

  ● 1-1/2 cup  sugar 

  ● 1 cup pumpkin puree 

  ● 2 eggs 

  ● 1/2 cup canola oil 

  ● 1/2 cup water 

  ● 1/2 cups walnuts 

Topping: 

  ● 1 T. sugar 

  ● 1 t. cinnamon  

Preheat oven to 350˚F. 

Line 12 cup muffin pan with liners. 

1. In a large bowl, combine all the ingredients, except the sugar & cinnamon for the topping. 

2. Fill the muffin cups. Then in a small bowl, mix the cinnamon & sugar together and sprinkle on top of muffins. 

2. Bake for 25 minutes. Test one of the muffins with a toothpick for doneness. Let the muffins sit in the pan for 5 minutes, then remove to a cooling rack to finish cooling.
