Nothin' But Muffins #3: Oatmeal Buttermilk Muffins

These are a traditional morning muffin. Not too sweet, but hearty and home-spun.

- Recipe -

  ● 2 cups flour 

  ● 1  T. baking powder 

  ● 1/2 t. salt 

  ● 1/4 cup sugar 

  ● 1/3 cup honey 

  ● 1 egg 

  ● 1 cup buttermilk 

  ● 1/3 cup butter, melted 

  ● 3/4 cup quick-cooking oats 

  ● 3/4 cup raisins 

Line muffin pan with 12 muffin cups. 

Preheat oven to 350˚F. 

1. In medium bowl, whisk together the flour, baking powder, salt and sugar. 

2. Add honey. egg, buttermilk and melted butter. Using a spatula, stir in oats and raisins until everything is well mixed. 

4. Scoop batter into muffin tins. 

5. Bake for 20 minutes. Let muffins sit in the pan for 5 minutes, then remove to a cooling rack.
