Nothin' But Muffins #17: Strawberry Muffins

TweetWhen strawberries are in season, these are a great muffin to make!
- Recipe -
● 1 cup strawberries, chopped
● 3/4 cup +1 T. sugar
● 2 cups flour
● 2 t. baking powder
● 1/2 t. salt
● 1/2 cup milk
● 1/4 cup canola oil
● 3 eggs
● Zest of 1 orange
Strawberry Butter:
● softened butter
● strawberry jam
Preheat oven to 400° F. Line 12 cup muffin pan with paper liners.
1. In a small bowl, add 1 T. sugar to the chopped berries. Set aside. 2. In large bowl, mix the flour, 3/4 cup sugar, baking powder, and salt.
3. In bowl or measuring cup, mix together milk, oil, eggs and zest. Add to the flour mixture. Drain the juice off the berries and fold into batter, mixing until just combined.
4. Divide the batter into the muffin wells and bake for 15 minutes. Test with a toothpick for doneness. Let muffins sit in the pan for 5 minutes, then cool on rack.
To make strawberry butter, just mix the butter and jam together.
