Nothin' But Muffins #14: Carrot Muffins

Perfect for Easter morning, or any morning!

- Recipe -

● 1 cup flour

● 3/4 cup sugar

● 1 t. baking soda

● 1/2 t. salt

● 1-1/2 t. cinnamon

● 2 eggs

● 1/2 cup canola oil

● 2 cups grated carrot

● 1/2 cup chopped walnuts

Preheat oven to 350 ̊F. Line muffin pan with paper liners.

1. Whisk together the flour, sugar, baking soda, salt and cinnamon in large mixing bowl.

2. Add eggs, one at a time, mixing well after each. Then add oil, carrots and nuts.

3. Scoop into muffin pan and bake 18 minutes. Test for doneness with a toothpick. Let muffins sit in pan for 5 minutes, them remove to rack to cool.
