Buttermilk Substitute:

- Put 1 T. of white vinegar or lemon juice in a 1 cup measuring cup. Add enough milk to just fill the cup. Let this stand for 5 minutes, then add as much as needed to the recipe.

 

Cake Flour Substitute:

- To make 2 cups of cake flour, combine 1-3/4 cups all-purpose flour with 1/4 cup cornstarch.

- To make 1 cup of cake flour, put 2 T. of cornstarch in the bottom of a 1 cup measuring cup, then fill the rest of the cup with all-purpose flour.

- To make 1/2 cup of cake flour, put 1 T. of cornstarch in the bottom of a 1/2 cup measuring cup, then fill the rest of the way with all-purpose flour.


Cream of Tartar Substitute:

- Cream of Tartar is used to stabilize egg whites. If you find your cream of tartar to be very strong in taste, just leave it out. Be gentle when you are folding in your egg whites, though!


Molasses Substitute:

Use the same amount of:

- honey

- brown sugar

- dark corn syrup

- Trimolin
