Farmers' Market Gourmet #8: Crostini

Hearty little toasts topped with amazing flavors!

- Recipe -

  ● 6  slices crusty bread, sliced 3/4"- 1" thick 

  ● 1 clove whole garlic 

  ● 1 cup tomato. juiced and chopped 

  ● 1 T. capers, drained 

  ● 1 clove minced garlic 

  ● 1 T.  olive oil 

  ● 6 fresh basil leaves, chopped 

  ● Salt and pepper to taste

1. Broil tops of bread until quite browned. Rub each toast with the whole clove of garlic.  Set aside. 

2. Mix tomatoes, capers, garlic, olive oil, basil and salt & pepper in medium bowl. 

3. Top the toasts with the tomato mixture.
