Farmers' Market Gourmet #17: Warm Fruit Compote

When the variety of fresh fruit is limited, you can always make this delicious compote with dried fruits from the previous season!

- Recipe -

● 3 cups dried fruit (apricots, apples, plums, cherries, raisins, peaches, etc...)

● 1/4 cups brown sugar

● 3 strips orange zest  

● juice from 2 large oranges

● 1 t. vanilla

1. Mix fruit, brown sugar, orange zest and juice in medium saucepan. Place lid on top and bring to a boil. Reduce heat to medium-low and let slowly simmer for 20 minutes. Stir occasionally.

2. Remove pan from heat and stir in vanilla. Let compote cool in pan. Serve with vanilla ice cream, pound cake, cookies or on top of waffles.
