These oven roasted veggies are easy to put together, taste naturally delicious and let you use ANY of the veggies you find at your local Farmers' Market.
- Recipe -
● Assortment of veggies (potatoes, peppers, onions, fennel bulb, carrots, cauliﬂower, etc...)
● 2-3 T. olive oil
● kosher salt
Preheat oven to 400 degrees.
1. Clean and cut veggies up. Place on rimmed baking sheet so that they are in a single layer. Drizzle with olive oil, salt, and pepper. Toss with your hands, then spread out evenly on the baking sheet.
2. Place in oven for 20 minutes, then remove the pan and toss with a spatula. Place back in oven for another 10 minutes; stir. Place back in oven for last 10 minutes.
3. After a total of 40 minutes, remove the veggies from the oven. Sprinkle with another dusting of salt. Stir and serve!
