Farmers' Market Gourmet #10: German Apple Pancake

This makes a great Sunday morning breakfast and you can use ANY fruit that is in season!

- Recipe -

  ● 4 cups sliced apples    

  ● 1/2 cup flour 

  ● 1 T. sugar  

  ● 1/2 t. salt  

  ● 2 large eggs, lightly beaten 

  ● 2/3 cup milk 

  ● 1 t. vanilla 

  ● 2 T. butter  

  ● 1/4 cup brown sugar  

  ● 1/2 t. cinnamon  

  ● 1 t. lemon juice  

  ● powdered sugar for dusting  

  ● maple syrup 

Preheat oven to 500˚F.

1. Heat butter in 10-inch ovenproof nonstick skillet over medium-high heat until sizzling. Add apples, brown sugar, and cinnamon; cook, stirring frequently with heatproof rubber spatula, until apples are golden brown, about 10 minutes. (If using soft fruits, like berries, cook for only 2-3 minutes.) 

2. While the apples are cooking, whisk together the flour, sugar and salt in medium bowl. Add the eggs, vanilla, and milk and mix until just combined. 

3. When apples are done, remove from heat and add lemon juice. Then pour the  batter around and over apples . Place the skillet in oven and immediately reduce oven temperature to 425˚F and bake until pancake edges are brown, about 15 minutes. 

4. Using an oven mitt to protect your hand, remove hot skillet from oven. Loosen pancake edges with heatproof rubber spatula and slide the pancake onto serving platter. Dust with powdered sugar, cut into wedges, and serve with maple syrup. 

Variations: 

Use any season fruit: Pears, Plums, Peaches, Nectarines, Apricots, Blueberries, Strawberries, Raspberries & Blackberries
