Easy Entertaining #31: Spaghetti and Meatballs

Mmmmm....Homemade meatballs and homemade sauce. Comfort food at it's best!

● 1 lb. ground beef

● 1 lb. Italian sausage

● 1 cup torn bread

● 2 cloves garlic, minced

● 1/2 cup fresh basil, chopped (or 2 T. dry basil)

● 1 egg

● 1 t. salt

● 1/2 t. pepper

● canola oil


● 2 (28 oz. cans) crushed tomatoes

● 2 cloves garlic, minced

● 1/2 cup fresh basil, chopped

● salt and pepper

● 20 oz. sliced mushrooms

● 1 pound spaghetti

● 1 T. olive oil

1. For the Meatballs: In a large bowl, mix together the beef, sausage, bread, garlic, basil, egg, salt and pepper. Make sure ingredients are well combined.

2. On medium heat, in a large skillet, heat 1 T. of canola oil. Once oil is hot, make walnut-sized meatballs and place them in the hot oil to brown. As they cook, turn the meatballs with a spatula so that they become browned on all sides. Then remove the meatballs to a paper towel lined plate to drain. Add 1 T. of oil in the pan and continue cooking the rest of the meatballs.

3. For the Sauce: In a stock pot, mix together the tomatoes, garlic, basil, salt & pepper and mushrooms. Bring to boil on high heat. Then reduce the heat to medium and add the meatballs. Cover with a lid and cook for 20 minutes.

4. Meanwhile, add some salt to a pot of water on high heat. Cover with a lid and bring the water to boil. Cook pasta for about 10 minutes, then drain in colander. While pasta in still in the colander, toss in 1 T. of olive oil with tongs.

To serve: Place a portion of pasta in the center of a deep dish and ladle on some meatballs and sauce.
