Easy Entertaining #18: Mahi Mahi Fish Tacos

Fresh and delicious, these Fish Tacos are perfect for entertaining!

Southwestern Marinade for Fish: 

  ● 2 lb. skinless Mahi Mahi fillet 

  ● 2 T.  olive oil 

  ● 1 lime 

  ● 1/2 jalapeno pepper , finely diced 

  ● 1/4 cup cilantro, chopped 

  ● salt & pepper 

Taco Ingredients: 

  ● sliced lettuce 

  ● 1/4 cup cilantro, chopped 

  ● red onion, diced 

  ● pico de gallo or fresh salsa 

  ● guacamole 

  ● sour cream 

  ● 8-10 corn tortillas, warmed in microwave 

1. For marinade: Place fish in shallow dish and sprinkle with olive oil and lime juice. Top with jalapeno pepper, cilantro, salt and pepper. Toss with your hands, making sure to coat both sides of the fish with the marinade. Let marinate for 20 minutes or more. (If you're going to marinate for more than 20 minutes, cover the fish and place in the refrigerator.) 

2. While the fish is marinating, combine the lettuce and cilantro into a bowl. In smaller bowls,  place the onion, salsa, guacamole and sour cream. 

3. When you're ready to start cooking the fish, get the BBQ going and spread the coals out into a single layer. Cook fish until it is nicely browned. (If you'd prefer, you can also cook the fish in a large saute pan over medium-high heat.) Once the fish is cooked, slice into pieces. 

4. To assemble the tacos: Take a warm tortilla and place it on a plate. Put some lettuce down the center of the tortilla, and add a spoonful of red onion. Place 1-2 pieces of fish on top, then add some salsa, guacamole and sour cream.
