Easy Entertaining #16: Summer Rolls with Dipping Sauces

These refreshing & delicious Summer Rolls can be used as an appetizer or a main dish.

● rice paper wrappers


● cooked & peeled shrimp, medium-size (61-70)

● 10-12 dried shitake mushrooms, (rehydrate in hot water for 30 minutes)

● cilantro leaves

● 1/2 lb. fine noodles (vermicelli, angel hair, (snapped in 3rds, cooked, rinsed in coldwater, drained & topped with 1 T. olive oil)

● 1 bunch asparagus, (par boiled 2-3 minutes and immediately cooled)

● fresh spinach

● bean sprouts

 

Chili Dipping Sauce:

● ⅓ c. soy sauce

● ⅓ c. brown sugar

● ½ c. water

● 1 T. catsup

● ¼ c. dry sherry

● ½ t. crushed red pepper

● 1 clove garlic, minced

● 1 green onion, sliced

● 1 T. cornstarch

● 2 T. water

 

Peanut Dipping Sauce:

● 1/4 cup peanut butter

● 1/4 cup water

● 1/4 cup soy sauce

● Juice of 1 lime

● 2 cloves garlic, minced

● 2 T. rice wine vinegar

● 1-2 T. chopped peanuts

 

 

1. Make sure all the ingredients that go in the Summer Rolls are prepared and ready to go.

 

2. Soak rice paper rounds, one at a time, in shallow dish, filled with warm water. When sheet is translucent, transfer to a piece of parchment to begin making the Summer Rolls.

 

3. Begin by placing a few cilantro leaves on the rice paper wrap, then 3-4 shrimp. Then add 1-2 asparagus, some noodles, 2-3 spinach leaves, some bean sprouts, grated carrot and 3-4 slices of mushroom.

 

4. Fold the ends in then roll up. Place on plate and cover with damp paper towel white you make more! When you have all you need made, refrigerate the rolls until you're ready to serve.

 

Chili Dipping Sauce:

In small saucepan, mix together soy sauce, brown sugar, water, catsup, dry sherry, red pepper, garlic and green onion. Bring to a simmer. Then mix cornstarch and water into a slurry and add to simmering sauce. Stir until slightly thickened.

 

Peanut Dipping Sauce:

Combine ingredients in small saucepan over low heat. Stir until smooth and creamy. Top with chopped peanuts.

 

Note: If you have left-over ingredients, make them into an Asian Noodle Salad and use any left-over dipping sauces as the dressing.
