Cupcake Show #8: Chocolate Cupcakes with Fluffy Peanut Butter Frosting

These are rich chocolate cupcakes topped with fluffy peanut butter frosting!

- Recipe -

Cupcakes:
  ● 2 oz. unsweetend chocolate
  ● 1 cup cake flour
  ● 1 tsp. baking soda
  ● 1/4 tsp. salt
  ● 3 T.  cocoa powder
  ● 4 T. butter, softened
  ● 1-1/4 cups brown sugar
  ● 1 tsp. vanilla
  ● 2 eggs
  ● 1/4 cup buttermilk
  ● 1/2 cup boiling water


Frosting:
  ● 1/2 cup butter, softened
  ● 1/2 cup creamy peanut butter
  ● 3/4 cup powdered sugar
  ● 1/2 t. vanilla
  ● 1 T. milk

 

Line muffin pan with 12 cupcake liners.

1. Melt unsweetened chocolate in microwave in 30 second bursts.

2. Mix dry ingredients together in medium bowl: flour, soda, salt and cocoa powder. Set aside.

3. In mixer, beat butter and brown sugar until fluffy. Add vanilla.

4. Add eggs, one at a time.

5. Mix in melted chocolate. Add 1/2 of the dry ingredients, then 1/2 of the buttermilk. Repeat with the rest of the flour and buttermilk. Mix boiling water in, until just combined.

6. Scoop into cupcake wells and bake for 20 minutes. Test for doneness. Let pan sit on cooling rack for 5 minutes, then lift cupcakes out onto cooling rack to finish cooling.


Peanut Butter Frosting:
1. Cream butter in mixer. Add peanut butter.

2. Mix in powdered sugar, vanilla and milk. Beat until fluffy, about 5 minutes.
