This tea sandwich is hearty, delicious and fresh. Serve it on mini croissants and your tea guests will literally swoon with delight!

1 pound cooked chicken (white meat), chopped
3-4 ribs celery, chopped
1 sweet red-skinned apple, chopped
3/4-1 cup light mayo
1. Mix together the chicken, celery, apple. Add salt and pepper to taste. Stir in mayo and mix well.
2. Split the croissants in half and place the chicken salad on the bottom half. Replace the top and cut the entire sandwich in 1/2.
